Repost @slowfood_international by @media.repost: There is only one baker left in the Swiss Canton of who still makes traditional rye according to its old recipe. In the tiny village of Simplondorf, Urs Amadeo still bakes the slightly flattened conical loaves of rye bread, mixing fine rye bran, water, and salt to a jealously guarded starter. The starter has been passed down several generations, and its mix not only imparts a delicious sour flavor the the bread, but guarantees a long life to it (as long as a few months). The Slow Food Ark of Taste is a project aimed at protecting biodiversity by cataloguing and promoting products like Switzerland's Traditional Valais Rye Bread. Repost @slowfood_international by @media.repost: A report released today by the FAO details the severe threat caused by biodiversity loss to our food and agriculture. The current model of intensive industrial agriculture is unsustainable and destructive, and it is wiping out the biodiversity that supports our ecosystems and underpins our food system. Unsustainable water and land management, pollution, climate change, and overharvesting are all cited as major drivers in the loss of biodiversity, as species and varieties of plants and animals die out at an alarming rate. Slow Food has been working for decades to protect biodiversity, and this FAO report reinforces the urgency for action at every level. - - - Photo © Elisa Folco - - - #slowfood #slow #food #environment #local #biodiversity #sustainability #foodforchange #sustainable #agriculture #wastefree #waronwaste #un #bees #savethebees #honey #biodiversity #savebiodiversity #insects #UnitedNations #FAO

Repost @slowfood_international by @media.repost: The FAO report released yesterday warns of the collapse of our food system if we do not act to address biodiversity loss. Slow Food has been actively committed to protecting biodiversity around the world since 1996, with the creation of the Ark of Taste, a catalogue of products at risk of disappearance. We recently welcomed the 5,000th product aboard, but if the FAO report has made anything clear, it is that there is still a long way to go. - - - #slow #food #slowfood #environment #local #biodiversity #sustainability #foodforchange #culture #gastronomy #eatlocal #future #sustainable #agriculture #futureoffood #arkoftaste #ark5k #vegetables #un #climate #unitednations #bees #savethebees @fao #fao
