#Repost @slowfood_international with @appreposter Real Bitto is a true rarity, and a historic rebel 🧀 that went against the PDO and survived through individual efforts and supporters. Come taste it at #Cheese2017. @sinasucuka ・・・ Cavizzola is one of most remote producer of Bitto cheese in the Alps. We had to hike 1.5 km, sometimes at 45° to reach the top. Only the local breed, Bruna Alpina Originale, can climb that high. In the recent years many producers have switched to Frisona breed, they yield much more milk than OB. However, Frisona can not climb and the milk does not taste the same way. I am very sad to say that due to changes in regulations that are made by the Italian government means that the real Bitto produced here, in this beutiful place that sits at 2000m cannot be labeled Bitto anymore. It is now called @storicoribelle. #slowfood #slowcheese #presidioslowfood
