In the tiny village of Simplondorf, Urs Amadeo still bakes the slightly flattened conical loaves of rye bread, mixing fine rye bran, water, and salt to a jealously guarded starter. The starter has been passed down several generations, and its mix not only imparts a delicious sour flavor the the bread, but guarantees a long life to it (as long as a few months).
