We will be voyaging near and far to discover the biodiversity of the world’s foods. Follow us! The Arnaucho #chili #pepper is a indigenous variety of an area of #Peru called “Norte chico”, a very fertile land that includes the provinces of Huara, Barranca and Huaral. This area was used in the past by pre-Colombian populations, for example that of the Caral dating back to 3000 BC, as an intensive agricultural area. The Arnaucho chili pepper is grown by small farmers along with other types of crops. The fruit is characterised by a shape similar to a child’s top but slightly wider with an irregular surface. In northern Peruvian cuisine the arnaucho is used fresh to flavor and season mainly the typical fish dishes from the region; salsas are also made by mashing this variety with others, garlic, cumin and lemon to dress tubers. At present this chili pepper variety is only sold in regional markets and in some restaurants, since it is being increasingly replaced by other more common varieties.
