Repost @slowfood_international by @media.repost: Gerogia is broadly recognized as one of, if not THE oldest wine region in the world. Archeologists have unearthed wine remnants dating back 8,000 years in the Caucasus country, trapped inside the fragments of ancient qvevri, the huge terracotta pots still made and used today.🏺 The qvevri are buried underground, leaving just the mouth poking above the surface. Grapes are thrown in to ferment then left to age for months on end. The perfect method for making natural wine, the earth keeps the temperature stable, while the shape of the qvevri promotes the seperation of the wine from its sediment. - - - #slowfood #slow #food #foodforchange #local #sustainability #environment #biodiversity #climatechange #terramadre #gastronomy #eatlocal #culture #organic #presidium #artisan #traditional #delicious #tasty #future #wine #georgia #naturalwine #natural #grapes #caucasus #fermentation #ferment
